Instant Pot Turkey and Potatoes | Flavor Makers Series | McCormick
Thanksgiving -- anytime! No, wait, come back! Stay!
It's okay, you don't needto be stressed
by the thoughtof making a turkey dinner,
because my Instant PotThanksgiving recipe
takes less than an hour.
[MUSIC]
We're gonna start bymaking the seasoning blend.
We have our McCormickGarlic Powder --
it's not Thanksgivingwithout garlic.
Frankly, it's no mealwithout garlic, in my opinion.
We got our paprika -- we wantthat nice flavor and color.
We're gonna add some sage.
Anytime you're workingwith poultry,
sage is a great addition.
And of course, salt,'cause no meal is completewithout a little bit of salt.
And wait, first shouldhave taken the top off.
[BEEP]There we go.
Thyme is also a great additionto the spice mix,
and some black pepper. There we go.
So we are gonna mix this up,and add all that flavor
right underneaththe skin of the turkey.
And so we're gonna separatethe skin a little bit,
and take about a tablespoon, and we're gonna schmear
all that flavorunderneath that skin.
Once the spices are in,
make sure you patthat skin nice and dry.
That's gonna geta better sear,
and we want our turkeyto look good on the platter.
This was a messy job --make sure you wash your hands.
So, we're gonna usethe saute setting,
and we're gonna meltsome butter.
And we are goingto brown our turkey.
We're gonna make surewe get it skin side down.
Ready for this? It's gonna bethe best sound ever!
[DEEP FRYING SOUND]
We're gonna let that sitin there for a few minutes,
and we're gonna geta nice, brown color all around.
All right, guys,we seared all three sides.
We're gonna pullthe turkey out. Got it!
Look at that!I got it, I'm gonna make it,
I'm gonna make it!I got it.
[APPLAUSE] That was good. All right, see all that?
You can actually even seesome of the spices
come up through the skin --that's fantastic.
Sooooo, let that sit,
and we're gonna add ourpotatoes directly into the pot.
Don't worry if there's stuffsticking on the bottom;
that's all flavor, and it's allgonna come in the final dish.
To that, we're gonna addour Kitchen Basics ChickenStock,
just to enhance the flavor.
And then, we're gonna placethe turkey back in,
skin side up,
and we're gonna cook thatright on top of those potatoes.
Now, remember that spice blendwe made
in the beginningthat we stuck under the skin?
We're gonna add the restof it right to the top.
All we need to do nowis put the lid on,
and we're gonna set thepressure on high for 30 minutes,
and we're gonna letthis guy do his job.
All right, guys, our Instant Potdid its magic.
It's been 30 minutes.
We have to vent itto actually get the guy out.
So to do that, we're gonna twistthis little valve,
and it's gonna steam,
so just be really carefulwhen you do this.
I'm gonna slide it over --[BURST OF STEAM]
and there you go! It's a lotof pressure in there!
We're gonna waituntil that dies down,
and that little pin will drop,
and then you'll know you're safeto take the top off.
Our pin has dropped. It is now safe to open the pot.
Ta daaaaa!Yes, look at this!
Know what my momused to always say?
You know it's donewhen it's fallin' off the bone,
and that's what we havehappening right now.
And actually, we havea little extra juiciness.[Laugh]
All right, we've got allturkey out of the pot.
We're gonna let this restfor at least 10 minutes,
and work on some potatoesand some gravy,
'cause what's Thanksgivingwithout potatoes and gravy?
So, we used small red potatoes.
You don't wanna cut them, they'll get too soft. Umm,
The whole ones cookperfectly,
and they're just doneenough to mash.
So to our potatoes,we're gonna add some butter,
let that melt --let's get this guy in here.
And now we'll take outall those juices.
Let's get -- watch out,the Instant Pot is hot.
So you want to take outthe inner pot.
Look at that -- it'sThanksgiving in liquid form.
We're actually only going to usea cup
of the drippingsfor our gravy today,
and don't letthat go to waste, guys.
Freeze it, use it on thosemid-week meals
when you need a quick gravy, and you don't have a bone in cup.
Let's measure out a cup.
So we're gonna makeour gravy base.
We're gonna actuallyadd two packets
of our McCormick Turkey Gravymix, right to the cold water.
The reason why I'm doing thisin cold water is,
we don't want anyof those clumps in our gravy.
All right, so we'regonna whisk that.
We're gonna add some flour.
Let's turn our Instant Potback onto saute.
We're gonna addthat cup of drippings
that we reserved from before --here we go.
We'll add our gravy mix, then this will come up to heat,
and will start to thicken.
All right, so let's mashthese potatoes.
So these aren't gonna belike traditional
Thanksgiving mashed potatoes.
They're gonna bemore of a home-style,
with the skins on.
And let's see if we can get it,kind of scoop around your edges.
They don't have to be perfect;
this is a quick hourThanksgiving dinner.
All right, guys, looks likeour gravy is done.
It's boiling, it's thick. There we go. Look at this.
Ohhhhh! Look at all that.
You can see the little thymeleaves -- that's my favorite.
All right, guys, here it is.
You've got these awesomegolden smashed potatoes,
our beautiful turkey breast, this flavorful gravy.
